Ingredients
– 2 1/4 cups whole milk
– 2 tablespoons honey
– 2 1/4 teaspoons instant yeast
– 1 large egg
– 4 tablespoons unsalted butter melted
– 4 3/4 cups whole wheat flour
– 1 1/2 teaspoons salt
– Cornmeal for dusting
Instructions
1-First, warm the milk and honey to 105-115ยฐF, then stir in the yeast and let it sit for 5 minutes until it bubbles up.
2-Next, whisk in the egg and melted butter to blend everything smoothly.
3-In a stand mixer, combine the flour and salt, then pour in the yeast mixture and knead on low speed until it all comes together.
4-Increase the speed to medium and knead for 4 minutes until the dough is smooth and elastic.
5-Place the dough in an oiled bowl, cover it, and let it rise for 45 minutes until it doubles in size.
6-After that, divide the dough into 16 pieces, shape each into a ball, and flatten them into disks on parchment paper dusted with cornmeal.
7-Cover the disks and let them rise for another 20 minutes.
8-Preheat your oven to 325ยฐF and heat a griddle over medium-low heat.
9-Cook the disks on the griddle for 2 minutes on each side until they turn golden, then move them to a baking sheet and bake for 10-15 minutes until the inside reaches 200ยฐF.
10-Let the muffins cool completely before you slice and toast them for the best results.
