Ingredients

– Salt to taste

– Ground black pepper to taste

– 1 tablespoon neutral cooking oil

– 2 tablespoons unsalted butter

– 5 peeled garlic cloves

– 4 sprigs fresh rosemary

Instructions

1-Remove the filet mignons from the refrigerator 30 to 60 minutes before cooking to bring them to room temperature for even results.

2-Unwrap and season generously with salt and ground black pepper on all sides.

3-Preheat the oven to 360ยฐF (182ยฐC).

4-Heat a medium cast iron skillet over high heat for 3-5 minutes.

5-Carefully add 1 tablespoon of neutral cooking oil, then sear the filets for 2-3 minutes per side or 1-2 minutes for petite filets without moving them to form a nice brown crust.

6-Remove the skillet from heat, and add 2 tablespoons of unsalted butter, 5 peeled garlic cloves, and 4 sprigs of fresh rosemary.

7-Place the skillet in the oven and bake for 2-8 minutes, depending on how you like it done, pulling it out when the internal temperature is 5-10ยฐF below your target.

8-Take the steaks out, tent them with foil, and let them rest for 5-10 minutes before serving, spooning over the garlic and butter from the skillet for extra taste.
