½ cup extra virgin olive oil

A pinch of salt

Fresh ground black pepper (as desired)

Instructions

1-Getting this salad ready: Getting this salad ready is a breeze, and I’ll walk you through it so you can nail it on your first try. Start by preheating your grill to medium-high heat, which is around 400°F, to give those nectarines that perfect char. Once it’s hot, slice your nectarines in half, remove the pits, and brush them lightly with olive oil so they don’t stick for a tip on grilling fruits like this, check out our teriyaki salmon recipe that shares similar grilling techniques.

2-Place the nectarines cut-side down on the grill and let them cook for 3-4 minutes until they’re nicely marked and softened. Flip them over for another 2 minutes to finish up, then set them aside while you prepare the rest. In a large bowl, layer your mixed greens as the base, then add the warm nectarines on top for that contrast of hot and cool.

3-Next, tear the burrata over the salad and scatter the prosciutto slices for a salty kick. Drizzle everything with the homemade vinaigrette and season with fresh ground black pepper to taste. Serve it right away with grilled baguette slices, and you’ve got a meal that’s as fun to make as it is to eat for more ideas on fresh salads, try our spaghetti with sun-dried tomatoes and spinach for a similar vibe.
